Georgian AJIKA (recipe by my mother in law)

You often ask me about that delicious spice, so i put it here.
It taste pretty well with traditional ukrainians and georgian foods like Borstch etc, but you can use that whenewer you wand, it give good smell and taste for all your meals.


Adjika on "Tamara recipe"
 Coriander (Kindza) Greens: 2 parts 


 Dill greens: 1 part


Celery Greens: Part 1


Basil greens: 1 part


Grind to a meat grinder.

Further components on 1 liter ground greens:
Garlic - 1 cup 200ml cloves, crush on garlic press.


Peeled walnuts 1 cup, carefully crush in a mortar.


Nutmeg - 1 nut, crush in a mortar.


Coriander seeds 3/4 cup,


 cloves 3 pieces,


 fenugreek blue (can be yellow, blue is better) seeds 1 glass (200 ml).


Grind all that stuff on a coffee grinder.

Pepper bitter "Mutton horn" or "Chili" ground in packets, put on your own taste. 


The salt which is not iodated 1 glass (200 ml).
Mix everything thoroughly in a stainless steel saucepan and put it in a glass jar. Store at a temperature not exceeding 20 degrees Celsius in a glass container closed with a polypropylene lid.
