My own recipe of BORSTCH

As promised, I share my recipe for the most popular plate in Ukraine - Borsch.

1. Ingredients for 3.5-4 liters of soup:

- Meat: 1-1.5 pounds. It is referable beef, but it can be cooked from any meat. It is desirable to take a piece with bones and fat, the soup will be more tasty.

- Vegetables: 3-4 medium potatoes, 3 medium carrots, one cabbage (about 2 pounds), 2 medium beets,
1 large bulb of onion, a small glass of beans. Two to three garlic teeth.

- Spices: Paprika, Dried Basil, Italian Herbs, Salt, Pepper. A small pot of tomato paste



2. How to cook:
- Put on the stove the meat in the water. Dont put salt, meat will be more succulent. Leave to cook for 1.5 hours at low heat.


At this time, cook all other ingredients.
- Clean and cut large pieces potatoes. Clean and rub carrots and beets on a grater.
Cut the cabbage. Clean a few cloves of garlic.

Clean, cut and fry on vegetable oil onion with paprika (paprika 2 teaspoons approximately).


When the meat is already good (we test with a knife), we get it on the plate.
Salt boullion, add tomato paste, pepper,
seasonings. Boil that stuff 10-15 minutes, add grated carrots, beets and cabbage and fried onions.
Also add meat, pre-cutted into small pieces.

Boil it 10-15 minutes. Add chopped garlic and let the soup appear for 15-20 minutes.

Serve in deep dishes, with sour cream.

 You can add salt, pepper, spices to your taste.

Note: With all the ingredients you can play, replace something. In reality there are more than 200 variations of Borscht.
